Our U’Wine Selection committee is composed of two devoted wine lovers and respected professionals with contacts in the world’s most sought-after wine estates: Aymeric de Clouet is a wine expert to the Paris Court of Appeal, and a fond lover of old vintages Bordeaux wines; Quentin Chaperon is our full-time director of sourcing and Châteaux relationships, tirelessly travelling the world to uncover hidden wine gems. Their mission is to secure allocations from the most coveted wine estates and uncover Rising Stars to continue expanding our 1% U’Wine selection.

Château Les Carmes Haut-Brion

History: In the heart of the Pessac-Léognan appellation stands the Château Les Carmes Haut-Brion surrounded by its 5 hectares of vines. Its origins date back to the 16th century when the Lord of Haut-Brion gave the religious people of the Grands Carmes a water mill, surrounded by grassland and vineyards. The Carmelite Monks maintained the estate for 200 years, which was then sold as a national asset. Léon Colin bought it at the beginning of the 19th century and built the imposing Château that we know today. Since 2010, under the initiative of Patrice Pichet, a real-estate developer, the Château Les Carmes Haut-Brion has undergone significant investment. The new 2,000m2, 4-floor cellar designed by Philippe Starck has been designed like a boat, sheltering the ageing cellar under the river that runs through the property. Inaugurated in 2015, it is one of the most beautiful wine cellars of Bordeaux.
The vine is based on soil composed of large gravel, sands and clays. The encepagement is atypical for the appellation: it is composed of 42% Merlot, 40% Cabernet Franc and 18% Cabernet-Sauvignon. Les Carmes Haut-Brion is characterised by a sleek, powerful and refined style with complex aromas.
