The Domaine des Aurelles is a must in the Languedoc region and has just been awarded a fourth star by the Bettane & Desseauve guide of French wines in 2020. The Domaine des Aurelles was created in 1995 in Nizas, between Montpellier and Béziers. It was founded by Basile Saint-Germain and his wife Caroline with one major requirement: respect for nature and biodiversity. The low yields, the manual harvest and the vinification in hot enamelled steel vats testify to the commitment and the qualitative research taken by these two winemakers.
